Why fried pizza? it’s easy, fast, no need to turn on the oven in advance or use a baking stone, and it is tasty!
Why kale? well, this is simply the best way to use this green! This combo goes so damn well together.. just try it!
Pizza dough recipe (for fried and baked pizza’s) adapted from the Naken Chef, mr. Jamie Oliver
- 400gr bread flour
- 100gr semolina
- 16gr fresh yeast or half a package of dry yeast
- 15 gr salt
- 10gr sugar
- 300-340ml water at room temp
Mix the yeast into the flours, add sugar and 300 ml water, kneed, add more water if needed until you have a flexible, soft dough (but not very sticky/ watery) . Add the salt. Kneed further for 10-15 minutes until you have well glutinated dough (soft, smooth and elastic). Make a nice bowl from the dough and set aside covered in a damp towel.
Prepare the saute’ kale
- garlic cloves, sliced
- washed and sliced kale
- olive oil
Put the olive oil in a pan over a medium heat, add the garlic, toss for 1 min. Add the kale and toss until it is soft enough to eat (but don’t let it get soggy, we like our vegis green and crisp!). Add salt and pepper to taste.

- feta, mozzarella or even yogurt
- some chili flakes
- grated tomato (optional)
Divide the dough into 4-5 pieces, and make a ball of each. Roll each piece into a thick pizza.
Heat oil for frying (~1/2 cm high) in a thick bottom pan (skilette), put in one pizza pie, and fry until golden brown on both sides. Put the fried pizza on a rack or a kitchen paper to loose extra oil (shouldn’t be too much of it if the oil-heat is high enough). Make sure the dough is thoroughly fried -and baked inside.
Place the pizza on a dish that can fit in the oven, put the tomatoes, kale, cheese and chili and bake in a pre-heated oven to 180-200C. bake shortly – or don’t bake at all (it is really not necessary).
